Sweet Potato Casserole

Whether canned or fresh, sweet potatoes are only improved when whipped up into a casserole. Often, a baked sweet potato, baked in its own skin, holds the flavors best. It seems, the longer the potato, still in its skin, is baked, the sweeter its flavor. When baked until fully soft and caramelizing somewhat, these potatoes are ready to eat plain with butter, or to be peeled and baked again into a sweet potato casserole.
