Mustard: The Most Popular Condiment
Mustard is a condiment prepared from the seeds of the mustard plant. The mustard seeds are either used whole, ground, bruised or even cracked and then mixed with water, vinegar and some other spices to make a thick paste ranging in colour from light yellow to dark brown. The mustard has a sharp pungent flavour which is due to the presence of isothiocyanates and enzyme myrosinase which acts on glucosinolates. All these chemicals are responsible for the heat present in mustard seeds. Homemade mustard's are even hotter and more flavoured in comparison with those obtained from commercial preparations. Strong mustard can cause eyes to water, inflame the throat and nasal passage and also sting the palate.
